Crazy Gouda Bread

INGREDIENTS:

  • 1 tablespoon dry yeast

  • 1 ½ cups very warm water

  • 1 tablespoon of sugar

  • 1 tablespoon of olive oil

  • 1 teaspoon of rosemary

  • ½ teaspoon of sage

  • ½ teaspoon of thyme

  • 4 cups of flour

  • 2 teaspoons of salt (put aside for the flour)

  • Gouda cheese, grated

  • Honey of your choice

DIRECTIONS:

  • In a bowl, dissolve yeast in water.

  • With a mortar and pestle, crush rosemary, sage, and thyme together.

  • To bowl of dissolved yeast, add sugar, oil, and crushed spices. Do not add salt yet!

  • Add flour, then add salt. Stir together. If needed, add more warm water to make a wet dough.

  • Stir until smooth. Do not knead!

  • Cover and let rise until doubled in size – about 1 hour.

  • When risen, turn onto a floured surface. Shape into a French-style loaf and place on a greased baking sheet.

  • Cover top of dough with grated cheese and honey. Let rise until doubled in size – about 30 minutes.

  • Heat oven to 400°F. Bake for 20 minutes.

  • Let cool, then go CRAZY!
